Day 6: Belgian Waffles for Lunch




Today is our last day of the "No Peanut Butter" Challenge and I have to say that it was indeed challenging but the kids and I also had a lot of fun discovering foods they like and working together as a team on deciding what's for lunch. I definitely will continue to have them involved in their lunch packing even if occasionally a peanut butter sandwich sneeks back in :)

But, without further ado, here is our lunch from today:


We packed grapes and blueberries, a clementine and waffles with syrup. Today they also brought Orange juice to drink and a yogurt for lunch to complete the breakfast for lunch. 
Very simple but perfect for a Friday Lunch!


Lunch is packed in our favorite Easylunchboxes with an Easylunchboxes Mini Dipper to hold the syrup and we also added a fun Lunchbox Love Note to make their day brighter.

Pumpkin Waffles for Lunch



We returned yesterday from visiting family and after a long trip in the car we needed a quick dinner and an easy lunch box idea for the next day. I remembered that MOMables.com had a Pumpkin Pancake recipe but when I checked my pantry I did not have all the ingredients. So I improvised ;) Find the recipe below!

 But first, today's lunch:


I packed left over Pumpkin Belgian Waffles lightly sprinkled with powdered sugar, a small containers of cashews and a fruit&veggie fruit snack and grapes. I also packed a drinkable yogurt and ice water.

Ready for a quick and easy Pumpkin Recipe?


{Recipe}
feeds 6 hungry people

1 box of Belgian Waffle Mix 
1 can of organic pumpkin puree
1 TBS vanilla sugar or 1/2 teaspoon vanilla extract
1 teaspoon cinnamon
a pinch of nutmeg

I mixed the Belgian Waffle Mix according to instructions.
I then added the pumpkin puree and mixed it well.
Lastly I added the vanilla sugar, cinnamon and nutmeg.

Enjoy with powdered sugar.

TIP:
I always make one mini waffle first to test and see if I need more cinnamon or vanilla :)

Happy Pi Day!



I could not resist and had to make a special lunch for Pi day (3/14) today! π (sometimes written pi) is a mathematical constant that is the ratio of any Euclidean circle's circumference to its diameter. π is approximately equal to 3.14. The area of a circle is equal to π times the square of the radius of the circle. ~ Wikipedia



I made an open faced waffle sandwich with Nutella (inspired by BentOnBetterLunches) representing a circle and topped it with cinnamon number cookies from Trader Joe's. I also packed strawberries and a Lime Jello topped with more cinnamon letters :)

Fruity Lunch



Inspired by Meet the Dubien's Smoothie 101 I made us all Smoothies this morning and they were a big success!! I used frozen Bananas, Strawberries and Mango, Berry Kefir, Pomegranate Berry Yoghurt and Orange Juice, mhmmm.

Check out her post here if you are like me and hate to measure or just want to be spontaneous and use what you have but need some ideas! Plus, she has great tips on how to make big batches and freeze for those hectic mornings :)



I made lunch sticking with the same theme of fruity breakfast and included blackberries, strawberries, Goldfish crackers and a toasted waffle :)
