Mama and Me Brunch



It has been a hectic week filled with doctor's appointments, errands and many meals on the go.
We woke up to a rainy, cloudy, dark day and I felt we needed a good long hearty breakfast today before we are headed back out to finish up our weekly errands and even seeing one of my sons in a school play.

I decided to make a German breakfast with plain yogurt, Swiss muesli and Kaiserschmarrn. Kaiserschmarrn is comparable to a thick pancake and a popular dessert in Austria and Bavaria. It was exactly what I needed today.


My daughter's Din Din Platter Brunch:
  • an apple umbrella
  • plain yogurt with a mini chocolate chips rain drop
  • Naturebox Vanilla Macroon Granola
  • Kaiserschmarrn with powdered sugar
  • strawberries



My plate has also Kaiserschmarrn with powdered sugar, strawberries and a small bowl of plain yogurt with swiss muesli and apple bits.

Every-Bunny Loves Lunch



Last weekend we found a special visitor on our porch:


Can you guess how excited my kids were? We let him rest in the shade and gave him some water and carrots. He stayed for a couple of days and the kids loved having him around.


He eventually went home to a new home and I know the kids miss him. I decided that it would be nice to make them bunny themed lunches to remind them of our special guest :)


Our yubo is packed with:
  • four mini bunny sandwiches
  • carrots and Annie's bunny cheese crackers
  • vanilla yogurt with a sprinkle bunny shape and 
  • Naturebox Vanilla granola with a small bunny cup filled with mini chocolate chips for the yogurt


I also added a sweet Lunchbox Love Card to remind them how sweet it was of them to care for the bunny.


Our yumbox is packed with more bunny food:
  • Annie's cheddar bunnies
  • a cereal bar
  • 4 mini bunny sandwiches
  • tomatoes with a bunny pick
  • cucumber flowers
  • and a few gummy treats


And when my preschooler saw all the bunny lunches, she of course wanted one, too. She helped pack her own lunch for today:


Since she ate at home she just packed a yumbox tray:
  • with baby carrots
  • Annie's cheddar bunnies
  • four mini bunny sandwiches
  • apples with a bunny pick
  • and cucumber flowers as well as
  • a few fruit gummies

Simple Laptop Lunch Box


I cannot believe this school year is coming to an end and my 5th grader will graduate soon and become a middle schooler, sniff.


There are 9 more days of school and today we packed a simple Lunchtop Lunches bento box:
  • popcorn
  • fruit snack
  • apple slices
  • a Nutella filled stamped sandwich
  • a cereal bar

Muffin Tin Monday



This weeks theme for Muffin Tin Monday is The Perfect Picnic. With all the thunderstorms and rain showers we had lately we have not been able to have a real picnic outside yet, so we enjoyed the MTM picnic that much more!


Our Perfect Picnic Muffin Tin is packed with:
  • chicken nuggets
  • Beachball and Fish shaped Goldfish crackers
  • grape, strawberry, apple and mandarin fruit salad
  • watermelon balls
  • blueberry yogurt
  • and popcorn
We served ice cold milk with this Perfect Picnic lunch and added a cute ant napkin and fun bento utensils ;)

Mama's Lunch




Mamas gotta eat, too. I pack lunch for myself most days as well but often forget to post them.
Today, I am posting just my lunch for a change :)


I packed lunch in my monbento MB original bento box. I love the size which is perfect for a generous lunch.


I packed my monbento with

  • grapes
  • carrot sticks
  • a cheese stick 
  • a vegan peanut butter bar
and
  • brown left over rice 
  • with a zuccini, squash and muchroom stir fry
  • I also packed some soy sauce which is not pictured. YUM!

Brunch



After the breakfast success yesterday, I packed everyone brunch for school:


I packed our Easylunchboxes with tomatoes and cucumber flowers, watermelon and a cheese and egg croissant with a couple of ketchup packages on the side.


For my youngest son I packed Spiderman egg sandwiches (similar tutorial here) , watermelon and a few cheez-its.

Breakfast-To-Go in our Laptop Lunches Bento Box


The countdown for summer vacation is on. Less then two weeks until my kids are off for the summer! That means I am busier then ever trying to get as much done as possible before school ends. For my daughter that means more time in the car. And in turn I often here a little voice in the back seat calling "Breakfast sandwich? Please?" It is so tempting to just pull over and hand my preschooler a quick breakfast from the drive thru before running errand.

I was thinking on how to provide her with breakfast on the go and realized that the Laptop Lunches bento box is perfect! Great for eating anywhere and the compartments can be rearranged to fit what you want to add.


Our Breakfast-to-Go Laptop Lunch includes:

  • watermelon (I cut a watermelon in smaller pieces and cubes at the beginning of the week and stored it in the fridge for convenience)
  • an easy egg&cheese breakfast sandwich and
  • an organic apple and strawberry sauce pouch on a cloth napkin
My daughter was thrilled and this was much healthier then a drive thru stop and honestly took no time to pack.

{How to Make A} Quick Breakfast Sandwich

You need:
1 croissant 
2 eggs
a little milk
1-2 slices of cheese ( we used American)
1 tbsp oil

To make this super fast sandwich:
Cut croissant in half.
Slice croissant horizontally.
Microwave both croissant halves for 10 sec and set aside.
Heat small frying pan with 1 tbsp of oil.
Scramble the egg with a small amount of milk.
Pour in pan and wait until egg sets. Flip. Cook until cooked through. Approx. 2 min each side.
Fill croissant with 1-2 slices of cheese and add egg. Enjoy!
